FLOURLESS + GLUTEN-FREE
And it’s absolutely DELICIOUS!! I’m making several crusts and then adding whatever fillings come to mind and popping them in the freezer. There’s nothing better than having these tasty treats on hand.
CRUST FOR A SMALL PIE:
Ingredients:
– 2/3 cup ground sunflower seeds
– 3 tbsp olive oil
– Salt
– A splash of water to achieve a moldable dough
Instructions:
Grind raw sunflower seeds in a food processor.Mix everything together. Place in a 15 cm diameter pie dish lined with parchment paper. Press down to form a thin base and edges.
Bake in the oven for approximately 12 minutes at 180 degrees Celsius. Remove.
FILLING:
Ingredients:
– 1 pear, diced
– 1/3 cup crumbled blue cheese
– 1 happy chicken egg
– A handful of chopped spinach leaves
– A handful of walnuts
Instructions:
Mix everything together, pour over the crust. Bake for about 15 minutes or until firm and golden.
Serve with a salad or vegetable mash, choose your favorite accompaniment.
